Excitement would be an understatement for all of us at Stonehedge
Inn and Spa. Under the tutelage of my father’s 18 years of experience
here at the Inn and Dawn with her Four Seasons upbringing, I know we have once
again established an unparalleled dining environment that is welcoming to all
people. It started with my realization that our beautiful restaurant Silks
had become out of touch with our guests and that its identity was missing a
connection with our true passion, Wine! So early last year we began our
journey towards what we now know as Left Bank.
We set out knowing that we did not want to stray from Fine Dining Service or
Food. Yet, I began by first asking my team one simple question, What is
Fine Dining? Although I now feel we already knew the answer, the trip
we were about to set out on was the punctuation mark. Thus we all piled
into my father’s car and began visiting restaurants throughout New England,
from the White Mountains, through Boston and down past New York City.
Working at the Inn full time for the past five years I felt Silks set an impression
as a Fine Dining establishment, but this expedition cemented my beliefs that
we were no longer in touch with the world. Fine Dining was no longer Suits
and Ties (although I do enjoy donning a great suit and tie myself); it was not
Silver Domed Entrees and White Gloves. Rather, it is the food, the service,
the personal attention and interaction that leaves people with an experience,
a welcoming, pleasurable sense of enjoyment. We always knew these to be
key components, but now knew the change that had occurred in Fine Dining was
in the atmosphere. This consequently led to us fashioning the more inviting
atmosphere of Left Bank.
Left Bank is designed to be a welcoming environment for all people to enjoy
a true Fine Dining Experience. Additionally, our world renowned Wine List
has a running mate in Keith Pooler, our new Executive Chef and leader of Stonehedge
Inn and Spa’s culinary team. We have never been ones to try and
confuse guests on what they are eating, and the harmony in Keith’s dishes
sing true to our palates and to the wines. Please, reintroduce yourself
to Stonehedge Inn and Spa and our new restaurant Left Bank. We hope you
too will have a true Fine Dining Experience.
